Vegetarian Diet Helps Lower Cholesterol

Cyrill Kendall of the University of Toronto and team, created the "Portfolio Diet" by selecting plant foods, like soy and eggplant, that have been specifically shown to reduce cholesterol. This vegetarian diet included 3 daily doses of Metamucil to boost fiber intake plus soy with every meal. They assigned each of 25 volunteers to either a standard low-fat diet or their Portfolio regimen and, in one month, LDL (bad) cholesterol levels dropped by 35% for the Portfolio group, but only 12% for those eating the standard low-fat fare.
